At Vasse Felix, a landmark winery restaurant is finally beginning to outshine its surroundings.
Mussels packed with dashi-glazed scallop mousse. With youtiao for dipping, oily rubble of toothfish topped with eel and prawn XO. Vasse Felix is already at the upper echelons of WA experiences after just two snacks. As chef Brendan Pratt combines proper skills with clear thinking and superb execution in the next meals, it becomes evident that this is a crucial one.
Of all, this is one of the state's most prestigious wineries, one with a proud history and a willingness to put money where its mouth is, creating its multi-level estate from marri, granite, and steel and placing it in ideal position among the vines. Whereas other vineyard chefs may feel bogged down, Pratt's meals are full of levity and vigour.
A platter of miso-cured Abrolhos Island scallops draped elegantly in kohlrabi and lardo can only be described as sophisticated and refreshing. Or a bold and confident slice of Rose Mallee beef served with tallow-enriched milk, taramasalata, and grilled radicchio?
While Pratt continues to delve deep into the riches of surrounding farms and producers, the entire VF wine collection is available and correct, along with warm, competent service. This is a full idea that has been realised by people with the necessary talent. It is not to be missed.
With a focus on Cabernet Sauvignon and Chardonnay, as well as Shiraz and Sauvignon Blanc / Semillon blends, our wines reflect Margaret River's strengths. Each parcel of fruit is vinified with little intervention and bottled in our contemporary winery overlooking the Wilyabrup Brook at our Home Vineyard.
We have carefully extended our vineyards to include four distinct and exceptional sites around the Margaret River region, including the region's oldest vineyard - our Home Vineyard in the Wilyabrup area - under the control of the Holmes a Court family since 1987.
Fruit is grown in the vineyard collection for the entire Vasse Felix wine family. Each vineyard is planted with the greatest types and clones available, and is cultivated responsibly using traditional and organic methods. The first of our vineyard blocks received NASAA organic certification in 2020.
