Ethos Deli + Dining Room, East Fremantle
Dallmyr, a German food firm, opened the first delicatessen in 1700.
The first delicatessen, which opened in New York in the late 1880s, catered to the German–Jewish community, giving rise to the kosher deli. There were 1500 of these delicatessens at one time, but only 13 remain in the United States now.
Ethos, a modern twist on an old school New York deli, sells some NY deli favourites, as well as eastern European cakes and breads, and has a strong tie to the eastern European deli.
The deli's homemade charcuterie and smoked small items play an important role. Every bite of every animal is used in the deli and dining room as part of our nose-to-tail strategy. All of our packaged small goods are manufactured of compostable rice, potato, and corn derivatives.
We selected to choose blemished, crooked vegetables that would never find their way onto a store shelf because they taste wonderful! Each season, we pickle and preserve, ensuring that we always have a pantry to work with.
We at Ethos Deli believe in leaving a little carbon footprint. All of our drinks are manufactured and bottled on-site, and all of our bottles are recycled. Our packaging is compostable and biodegradable.

Ethos Dining Room is a one-of-a-kind dining place with a warm, inviting ambiance.
Chef Meliss Palinkas pays homage to her Hungarian and German ancestors with a menu inspired by modern eastern European cuisine. Our emphasis is on fresh WA produce with low food miles and meals that adhere to our zero-waste philosophy.
Susan Whelan, co-owner, has handpicked our wine list with a focus on minimal intervention, natural, organic, and sustainable viniculture practises. Her wines are carefully selected from a showcase of the fantastic wines produced in Western Australia's wine regions.
